Hops: Mosaic, Simcoe, Krush

Brewed in collaboration with Watershed Pub to celebrate their 12th anniversary, this modern dry-hopped pils is bold and refreshing. Mall-Stalgia was mashed with extra pale pilsner malt, a touch of munich, a dash of carafoam, and mash-hopped with German Tettnanger. It was bittered with Cascade in the kettle, then whirlpooled with Mosaic, Simcoe, and Krush before knocking out onto Simcoe Hyperboost. Fermented with our Czech house lager strain, dry hopped with more Mosaic, Simcoe, and Krush, then lagered ice cold for over a month. The result is loaded with grapefruit, tangerine pith, lemongrass, melon, and stonefruit. Light bodied, dry, and crushable, with an assertive yet balanced bitterness.
