Paracosm 10 Year Anniversary Ale

For our 10th anniversary, we decided to blend an extra special beer from some of the barrels in our cellar. The final blend we settled on turned out to be an even split of Imperial Stout and and Imperial Brown Ale with about 15% Imperial Porter, each aged in a Westland whiskey barrel (shout out to our absolute favorite barrel supplier) for 12 to 16 months.
This result of all this time brewing and aging these beers is beautifully complex and well worth the investment. Paracosm deftly balances the richness of fairly dark malt with the roastiness of very dark malt, and the oaky, vanilla tinged, aromatic whiskey barrel character. It leads with notes of singed crème brûlée topping, transitioning into sweeter caramel, and finishing with decadent, slightly bitter flourless dark chocolate cake. Premium Seattle-based whiskey lingers in the shadows of the finish. Full bodied and indulgent.
