Short Days Long Nights
Fresh Hop Winter IPA
Canned: 10/9/26
Hops: Fresh “Deep Cut” Cascade, Centennial, Chinook
When we first made this Winter IPA with fresh-frozen Cascade in the dry hop last year, we immediately knew we had to make a true fresh hop version this year. We opted for Deep Cut Cascade, which is left to ripen on the bine significantly longer than traditional Cascade harvests, increasing total oil content without developing the off-flavors that most varieties would. Steeping (hot side) on hundreds of pounds of these fresh whole-cone hops further amplifies the orangey/piney character we love about this seasonal IPA.
It’s bold, timeless, and as fresh as fallen snow. A hearty dose of classic “C” hops layered over rich caramel malt summons a delicious nostalgia that warms the soul like the re-kindling of an old friendship. Citrus, pine sap, and spruce tips saturate the copper colored malt, while a subtle sweetness balances the assertive bitterness and hard water minerality.
